Tuna spuds are a must-have for me in my luteal phase (i.e. the week before menzies). Bestie and I consider this our carbo load time, which could go either way: pizza, crisps and junk food, or healthy carbs that are known to reduce cravings. We aim to eat for where our joy finds us, with absolutely no limitations, no judgements and just well.. enjoying. Even if that leads to us eating an entire bag of oreo's in 1 go and we find ourselves feeling nauseous after. We find that the most important part of this period of our cycle, because it's here where we find beliefs or ways of being that no longer serve us, meaning its right on time to get released during our period. I think this is rather enough for this page haha, let's go back to the tuna spud :/ 

This spud is my salvation. It's a great energy sustaining and filling choice that's really simple to make. And armed/fed with this, it's easy to turn down ultimately painful temptation.

Potato

1 

Tuna

145g 1 can

Grated cheddar cheese

1 tbsp (15g) 15ml

Avo

1/2

Mixed leaf lettuce

a handful

Coriander

a handful

Spinach 

a handful

Oregano dried

1 tsp (2g) 5ml

Mayonnaise

Mustard

Method

First

THE CHOSEN POTATO


  1. Bring a medium-sized pot of water to the boil, add the potato and boil for 40 min.
  2. Put the oven to 180℃/350℉/Gas mark 4.

  3. Grease an oven dish with olive oil, place the potato in the middle and grill for 15 min.

Cooking depends on large your potato is. Test with a fork which should pierce through easily.


Then

TUNA SALAD


  1. In a bowl: chop lettuce & spinach, cut up the avo.
  2. Add the tuna.
  3. Mix in herbs, mustard, mayo and salt & pepper.

Finally

ASSEMBLE: It's all about the layering !


  1. When the potato comes out of the oven, cut a cross on the top. Don't cut through to the bottom, keep the potato whole.
  2. Add butter and grated cheese into the opening.
  3. Then add the tuna salad into the opening, with the rest going on top and around.

Ready to serve warm
