This bad boy was invented when I went on a (failed) DIY oat milk mission. I didn't know what to do with the milked oats and when in doubt, have a cookie! So I decided to try making a batch of healthy, i.e. sugarless, yet delicious snacks. I rummaged through the kitchen to see what I could use with the oats and found: peanut butter, an egg and some leftover salad seeds (omega-3 "super seeds" - sunflower, pumpkin, sesame & linseeds). With a little cinnamon and some olive oil, they're the perfect feel-good treat!

 1 cup (125g) 250ml  Buy

Omega-3 seed mix 

tbsp (28.4g) 30ml Buy

1/2 tsp A large pinch

  I used oats to make oat flour instead of white/wheat flour, which can cause problems for sensitive foodies and isn't nutritious. You can also use spelt or almond flour. I buy porridge oats because it's more cost effective. You can use them in various delicious, and nutritious ways. Just use a food processor, blender or nutribullet to make a fine flour. 

! Swap eggs for a mixture of water and oil, 3 tbsp each, with 1 tsp baking powder. 🅥

! If you have allergies to peanuts replace with 1 ripe banana mashed. 

Omega-3 seeds are meant to be allergy free, but always check the packaging.

  1. Mix everything together. 
  2. Form little balls of dough in the palm of your hand and flatten.


And then...

BAKE


  1. Space them out on a baking tray lined with parchment paper. 
  2. Drizzle with olive oil and bake for about 10-15min until bronze and crispy to your liking.
