Oat Garlic Bread

For me, garlic is a gift from the gods. And bread, or rather "normal" bread made with refined white flour, is the work of the devil, making me lose myself in it's deliciously comforting but ultimately painful embrace. 

Garlic bread toasted in the oven or on a braai (barbeque in South Africa) was always a favourite of mine, despite the pain it caused. Now, after lots of trial and error, burps and blandness, I've found a version of this heavenly comfort that nourishes me.

  I used oats to make oat flour instead of white/wheat flour, which can cause problems for sensitive foodies and isn't nutritious. You can also use spelt or almond flour. I buy porridge oats because it's more cost effective. You can use them in various delicious, and nutritious ways. Just use a food processor, blender or nutribullet to make a fine flour. 

Swap kefir for homemade sour milk. Kefir is fermented milk that is very low in lactose and is a great buttermilk swap for most sensitive foodies. But it's not for everyone and can be hard to find. You can swap it for any milk or milk alternative with a tablespoon (15ml) of fresh lemon juice. 🅥

! Garlic is a high FODMAP food. I don't react to it in small amounts but if you're not sure what you're reacting to, garlic and onions are well-known offenders. You can still use garlic-infused olive oil, but replace the fresh garlic with chives and/or mustard seeds.

! Swap eggs for a mixture of water and oil, 3 tbsp each, with 1 tsp baking powder. 🅥

First

THE BREAD


  1. In 1 bowl: add flour, baking powder, milk, salt and eggs.
  2. Pour into a baking tray lined with parchment paper. 
  3. Top with seed mix and bake for about 40min (a skewer into the center should come out clean).

  1. Increase oven temperature to 200℃/400℉/Gas mark 6.

  2. Cut diagonal slits in the bread (not all the way). 

  3. Carefully pull slits open and season with a little salt.


Finally

THE GARLIC BUTTER


  1. Finely slice the garlic.
  2. Crush the parmesan, garlic and butter together. 
  3. Stuff into the slits in the bread and bake for another 10min or so (the cheese should be melted).

Serve warm, pull apart
