Homemade Muesli

The idea of making our own muesli came after we started sampling muesli and granola while staying at our Airbnbs in Woking during the post-lockdown time we were temporarily homeless!
Our affairs began quite independently as we were living separately. Up to then, neither of us even cared about breakfast much - unless it was pastry! French pastry to be specific. One day, on our way to work from a coffee shop for the day, we were pondering what we'd order to eat and ended up confessing our new crushes on muesli. It turned out we were both blocked from love over the same concerns about the sugar and other unnecessary stuff in it, which took away from its allure.
Buoyed by how synchronous our new fling was, we decided to take the plunge and find love by inventing it ourselves!
We love optimising the sh*t out of our health, specifically in terms of getting all our nutrients in the best possible way. So the fact that at that time our hair and nail health was suffering some neglect, prompted us to separately research exactly which ingredients would give us the best nutrients needed for our hair and nails. More beautiful synchronicity occured as we found those nutrients, quite elegantly, best provided by the ingredients that go into muesli!
We present to you, our feel-great, sugar-free, nutrient-packed, love-filled homemade muesli!!
Attendez un moment... Curious about the difference between muesli and granola? They have the same ingredients, such as oats, dried fruits, seeds, nuts etc, but granola has sugar in the form of syrups or honey and oil added before its baked. It can only be served cold as heating it would melt the syrups.
Muesli is raw and roasted, has no oil or syrup added and can be served hot or cold. Most store-bought muesli includes sugar in the form of granulated sugar or dried fruit.
Attendez encore... You might need to mentally and tastebudly adjust to the absence of sugar and the presence of a range of more earthy roasted flavours than you're likely used to. Everyone we've asked to taste test said it was "interesting" before they confirmed it was "DELICIOUS!"

♡ Swap dark chocolate for vegan chocolate bits. Our favourite vegan brand is iChoc for inspiration to try something new, they have a range of interesting combinations 🅥
Serving suggestion: Oat milk or Kefir. You can use any milk alternative you prefer, to spice it up with other flavours. We tried it with coconut milk, but it wasn't as appealing to us. Top with any berries you like and a few mint leaves. 🅥
How to store: Use any air tight glass jar's (we highly recommend recycling empty peanut butter jars, or other), and store in a cool place away from high heat areas to protect the chocolate from melting.
Method

First
THE ROASTING
Use 3 separate oven trays, spray "cook'n spray"or grease as you prefer.
Tray 1: Add the rolled oats and a tsp of cinnamon and spread them evenly. Roast for 15 minutes.
Tray 2: Spread the mixed nuts out evenly on the tray. Roast for 10 minutes
Tray 3: Spread the seeds out evenly. Roast for 8 minutes.
Meanwhile...
PREPARATION
Break the dark chocolate into pieces and finely chop into small chunks
Chop the mixed nuts once they come out of the oven.
Do not mix the chocolate with the nuts and seeds, leave everything to cool for about 10 minutes.

Lastly
MIX WELL
- Mix the oats, nuts and seeds once they have cooled.
- Add a tsp cinnamon, the chocolate and the chia seeds.
- Mix it all together a few times so that all the ingredients are blended well.

Serve with kefir or oat milk
