Mexican Night Nourishment

 Some of our favourite memories were made on Mexican nights out. Fuelled by deceptively delicious lime and strawberry margaritas, we met new loves, flirted shamelessly with old ones, laughed uproariously and sang shamefully as we passed giant sombreros around and ordered shots of tequila. Sometimes our food landed on the floor, sometimes our friends did too and one time everyone did. Between watching out for spilt nachos and people, we danced our way through birthdays, bachelorettes, dinner clubs, and mornings-after.

 We wouldn't feel good for days but with tequila around, who does? But as our 20s fascination with the puke-juice waned, we realised that it wasn't solely to blame. On our journey to find food love we realised very quickly that Mexican food was super shady, not to be trusted with our precious tummies.

Nachos fully loaded

I recreated this Mexican must-have taking into consideration the textures and tastes that all our mindfield ingredients bring. My sensitive foodie take on it is free from onions, tomatoes and peppers, and is lactose intolerant-friendly. 

Chicken enchiladas

I tried making my own rye tortillas because we happened to have some and it's healthier! I was also excited about creating a sensitive foodie version of the tomato sauce - which was the reason we've always had to avoid enchiladas.
