Kelp is a type of seaweed that lives in shallow bodies of water. It's found all over the world, but it's usage in food started in Asia.
Our healthy obsession with kelp started out as a mistake. We meant to buy seaweed pasta (actual pasta), but got this instead! We initially judged it by its bite, which is nothing like pasta. The name "noodles" is just a tad deceiving. I tried "rescuing" with different strategies hoping to give it a soft noodley feel. Fail. Once we stopped trying to make it be what its not, we accepted it for what it is, with its distinctly crunchy, springy texture.
Not great at being pasta: fantastic at being a vegetable
From accident to disappointment to delight, we went! It's actually an amazing cookaround ingredient for some of the crunchy vegetables we can't eat.
Crunch replacement
Great as a replacement for carrots, cucumber and raw onions in salads and Asian-inspired poke bowls.

Farming kelp has almost no environmental footprint and has the positive impact of protecting shellfish and marine plants by absorbing CO2.
Environmental impact comes from the farming equipment used to take it out of the water, product production and transportation. Buy as locally as possible.
