Broccoli Pizza Base

South Africans, especially Capetonians, are obsessed with anything cauli. Local foodie hero, Prof. Tim Noakes brought us low carb/'banting' deliciousness that went far beyond trendy. Low carb breads, pizza, brownies, you name it, became so ingrained in our world that it seemed bizarre not to find any them on menus in the UK. 

I've been trying to re-create them myself with varying degrees of success but I hadn't tried pizza yet. It so happened that when bestie had a craving for pizza we had broccoli in the fridge not cauliflower. So I decided to go rogue, did some research and ... WHO knew?! Broccoli pizza base is a thing too!

The thing I love most about this recipe is that it's super easy to make. It's literally just all ingredients mixed and magically baked into healthy heaven.

Note: as a veggie base, the texture is soft. It's easier to eat with a knife and fork.

Broccoli heads

Cheddar cheese grated

Coriander chopped

Garlic cloves crushed

Almond Flour

Grass-fed Butter

Tamari Soy Sauce

Mustard seeds

! Swap eggs for a mixture of water and oil, 1 tbsp each, with 1/2 tsp baking powder. 🅥

First

BROCCOLI MINCE


  1. Chop broccoli heads into small pieces and blend (I use a nutribullet!) until fine.


Then

THE MIX


  1. Chop coriander
  2. Crush garlic cloves
  3. Then mix in all ingredients and spices

Finally

THE BASE


Oven 180C/350F/Gas mark 4
40mins

  1. Line a flat baking tray with parchment paper
  2. Butter the paper
  3. Flatten the "dough" on the paper, pressing it into a thin base then pop in the oven.
